So a few weeks ago i broke the screen on my mothers macbook pro.... of course i didn't have the money to pay for it. so the deal was i had to cook something every other day so last week i found a sea-salt fudge recipe :) not sure which website but its really good!!!
So you will need:
300ml Double Cream
360g Caster Sugar
35g unsalted butter (dont even try to use lightly salted otherwise your fudge is going to be very salty!!)
2/3ts sea salt flakes + 1/2 ts for topping
2ts of water
1 ts of vanilla essence
First of all prepare a loaf tin of any size, which the fudge will cool in. If its metal then oil the tin and lay out a sheet of greaseproof paper across the middle so you can pull the fudge up. If its silcone then just give it a light oiling, you can pop the fudge out very easily!
Place the cream,sugar,butter,water and 2/3ts of sea salt into a sauacepan and bring to the boil., turn down the heat and simmer, stirrring pretty much constantly, so it doesn't stick. You can determine the weather your at the correct temperature by the soft ball stage. You drop a bit of mixture in to a mug of cold water, should it be cooked properly then the result will be the ball will be soft and squidgy when you are at the right temperature.
Then take off the heat and add vanilla essecnce and beat the mixture for a couple of minutes with a wooden spoon until it goes a paler colour. Pour into the prepared loaf tin, quickly smooth the surface and then leave to cool at room temperature, after it has firmed up a bit you can sprinkle the remaning salt on the top:)
and voila yum yum says mummy :D
